Tokyo has a category of restaurant that is small, excellent, and effectively closed to visitors. Eight seats, one chef, a phone that is answered in Japanese, and a preference for guests who have been before or who arrive through somebody who has.
None of that is snobbery. A room with eight seats cannot absorb a no-show, and a chef working alone cannot run a service in a second language while also cooking.
The three obstacles, in order
The reservation is the first. Many of these rooms do not take online bookings at all, and the ones that do often surface only on Japanese-language platforms. Someone has to make a call.
The introduction is the second. A number of counters take new guests only through an existing relationship, usually a hotel concierge who has sent them reliable guests for years. That relationship is the thing you are borrowing, and it is why hotel concierges are worth talking to before you arrive.
The service itself is the third, and the one people underestimate. If the chef explains each course in Japanese and you cannot follow it, you will spend two hours nodding politely at food you do not understand. It is a waste of a remarkable meal.
What actually works
- Book through the concierge at the hotel you are staying in, as early as you can. This solves the call and the introduction at once
- Give a month of notice for anything with fewer than twelve seats
- Have someone at the table who reads Japanese, so the courses land as intended
- Confirm dietary restrictions when you book, not on the night. A single-chef kitchen has no room to improvise
- Never cancel late. In a room this size it is a serious discourtesy and it will be remembered
On tipping
Do not. Leaving money causes confusion rather than pleasure, and in some rooms it will be politely returned to you. Thanking the chef properly on the way out is the correct gesture and it carries further.
