Tokyo, apart from three years in Vancouver, which is where the English comes from. I worked front of house in hotels for most of my twenties and learned the grammar of a formal Japanese dinner properly.
A lot of my bookings are counter dining, where the room runs in Japanese and a client who does not speak it will otherwise spend two hours smiling. I translate without making it feel like translation.
